Smokey Sausage Ragu

This is my favourite pasta dish. I think you are supposed to use italian sausages but I have never found any of them in the supermarket.

Pasta Peperonata

We have been making this dish for several years now. The peppers gently sweat for 30 minutes and go very soft and sweet

A good addition to this is roasted red peppers - added near the end, and black olives. Make sure you don't over do it with the parmesan cheese.

Chicken and Chorizo Jambalaya

This is another one of our favourites that we have quite regularly.

It would go well with sour cream and sliced limes. It can be quite dissapointing if the bottom burns so stir a few times near the beginning of the simmering and make sure it's not too hot.

Parsnip and Pancetta Pasta

This is one of the pasta dishes that I love and we have quite regularly. Again, it was inspired by a Jamie Oliver recipe though it is quite different. While the Jamie Oliver recipe used long pasta and thin strips of parsnip this uses diced parsnip and thick pasta giving a very different effect.

It is very rich - the parsnips and the pancetta caramalize together and it is absolutely lovely!

Frangipani Tart

This recipe was inspired by a Jamie Oliver recipe and it is one of our favourites. We have made this tart several times as it is very simple and doesn't take long to bake at all.

The zest of the orange can be a bit overpowering so use it sparingly. The tart goes well with creme fraiche as the sweetness of the tart complements the slightly sour flavour of the cream.
